One Quesadilla, Three Meals

Mmmmm, iced tea! I've been thinking about making a big batch of iced tea for a couple of weeks now-- I'm glad that I finally had a chance to make it this afternoon. Delish!!!

I used Bentley's Ginger Peach White Tea tea bags to make the iced tea. Here's how...

Easy Home-Brewed Iced Tea
  • Bring 6 cups of water to a boil.
  • Once water begins to boil, turn off heat and add 6 tea bags to water.
  • Seep tea bags for about 20 minutes.
  • Transfer liquid and tea bags to a pitcher (or other large container) and seep tea bags for another 10 minutes (longer if desired).
  • Remove tea bags and chill tea in refrigerator.
  • Once cold, add ice to tea and enjoy!
Here are the tea bags brewing in my "special" homemade hodgepodge pitcher that my friend Brendan gave to me a few years ago as a gift. (He was unemployed for a few months, so he got very "creative" with his Christmas gifts! That's him and our friend's pug in the photo. I'm obsessed with pugs!)


A paperclip worked great for hanging the tea bags while they seeped. (I also thought you guys would want to see an up-close shot of Brendan! What a goof!)


Chipotle: Gourmet Burritos and Tacos

Holy moly! A Chipotle restaurant recently opened down the street from our apartment, but Mal and I didn't think anything of it until our DC friends raved about it to us this weekend. Of course, the 4 of us just had to go for a late lunch this afternoon. I can't believe we were missing out for so long! Chipotle is a fast-casual dining restaurant that specializes in burritos and tacos.

Inside Chipotle, the docor is very modern and funky with clean lines and lots of stainless steel furniture.



I ordered a veggie quesadilla with green peppers, onions, black beans, corn, cheese, and hot salsa on the side. Look at how huge it is!


I cut my quesadilla in half-- I ate one half and saved the other for dinner.


Here's my dinner half... I still have about a 1/4 of it left! You definitely get your money's worth at Chipotle!


Sunday Night Baking

After dinner, I munched on a bunch of pitted dates, but they really didn't satisfy my sweet tooth. Kath (from Kath Eats) made the most amazing looking Baked Oatmeal Snack Bars yesterday, and I really wanted to try them out. We had all of the ingredients in our kitchen, so I decided to whip up a batch-- they were so quick and easy to make.

All I can say is wow about this recipe! I've already eaten 2 of the bars! They're going to make a perfect transportable snack for work this week. Thanks, Kath! :)

omggg i love chipotle! i can't believe this is your first time having it...this is kind of embarrassing but what i consider to be my biggest accomplishment is eating 2 chipotle burritos in one day...::blush::

And that quesadilla really IS huge. YUM. Gotta love those restaurant portions that are big enough for over two of your day's meals.

I recently discovered Chipotle, too - isn't it amazing?? I always get the veggie salad with extra peppers and onions, extra salsa, and extra corn, plus guac on the side. It's sososo good. I couldn't believe what I'd been missing! And their chips are delicious :)

Another good combination to try is white tea (I used decaf so I could drink it in the evening as well) and some peppermint oil. When I brewed mine, I used 5 cups of water and 5 tea bags and 1/8 teaspoon of peppermint oil. Warning, it was pretty strong at first so you may want to cut back or adjust to your preference. It is so freshing on a hot summer day, especially the ones we've been having in the Northeast. :-)

I love Chipotle, too! I live in NYC and all of the chain restaurants/shops (i.e. Starbucks, Chipotle, etc) now have to list the calorie count of each item on the menu on the ordering board. An order of the chips and guac are 800 calories or something like that! eek

I brew the coffee for the iced coffee the same way as a regular pot of coffee, but I use double the coffee grinds to make it double the strength. After the pot has finished brewing, I chill the coffee in the refrigerator in a big thermos. (Letting it chill overnight works best.) To make an iced coffee, I just add ice to the chilled coffee as well as milk, sugar, etc. It's a great treat on warm summer mornings, and making it at home saves you a couple of bucks!

I love Chipotle! My favorite thing is the vegetarian burrito bowl. I get the rice, black beans, mild salsa, corn, lettuce, and guacamole. Sooo good--and I also like it with the fajita veggies sometimes. Give it a try!
