The Big Salad

My breakfast held me over quite well this morning-- better than usual, actually. I was really busy at work, so food didn't cross my mind until well after noon. By then, I was hun-gry for a BIG salad from the salad bar!

I must say, today's salad was quite the masterpiece. I just about got one of everything from the salad bar, which is why it was a BIG salad!

  • Spinach
  • Marinated beets
  • Broccoli
  • Cherry tomatoes
  • Shredded carrots
  • Cucumbers
  • Artichoke hearts
  • JalapeƱos
  • Red peppers
  • Grapefruit
  • Mushrooms
  • Gorgonzola crumbles
  • Wasabi peas
  • Black beans
  • Chic peas
  • Edamame
  • Snap peas
  • Corn
  • Asparagus
  • Spicy rice and beans
  • Tabbouleh
  • Flax seeds

I finished off my lunch with a Pistachio Larabar. The pistachio flavor was very good, but it really didn't have a strong pistachio/nutty flavor like I had hoped. My all-time favorite is still Ginger Snap!

My afternoon snack is likely going to be a Kashi TLC granola bar. I'm not sure if I am really in the mood for one though... I'd rather something cheesy! :)

Back to the grind! Where did today go???

Man, I love the salad bar in Kresge SO MUCH. Unfortunately my office is not at the School but at Landmark Center, so I have to make a special trip for it - but it's worth it, and my coworker and I make the walk every once in a while. The Fresh City we have in our building has such a pathetic salad bar by comparison!

I love huge salads! There's a really spectacular salad bar close to my apartment, I probably spend far too much money there.

I noticed you put flax seeds on your salad from the salad bar and sometime bake with it. Do you have to grind the flax seeds in order to get the benefits? I'd like to cook with this more!

I bought my very first Larabar (apple pie) and Lara chocolate bar (or whatever they're called) in mint chocolate yesterday. I still have yet to try them and I can't believe it's taken me this long to buy them! I just don't have much use for bars usually, but they were on sale! :)

Thats the exact reason I love making my own salads or going to a place with a salad bar because I love variety when I eat and I usually add like a millin things!
