Chocolate Chip Olive Oil Muffins

Despite having an insane weekend, I managed to squeeze in some baking yesterday afternoon. I modified Jenna's Olive Oil Cake recipe by adding chocolate chips and making mini-muffins.

4 eggs
1 cup sugar
1/2 cup extra virgin olive oil
1/2 tsp baking powder
pinch of salt
1 cup flour (recipe calls for white flour, but I used whole wheat and it turned out great!)
chocolate chips, if desired

1. Beat together the eggs and sugar with an electric beater (I just hand mixed for awhile) until think and pale. Add the olive oil, baking powder and salt and beat again until combined. If desired, add chocolate chips. (I only made one batch of muffins with chocolate chips, so I'm not really sure how many to add. I'm guessing approx. 1/2 cup would work with this amount of batter.)

2. Fold in the flour and pour into a mini-muffin pan (or cake/loaf pan) sprayed with nonstick spray.

3. Bake at 350 for about 15-20 minutes until golden brown (40 minutes for cake/load pan.

The cookbook that this recipe is from says "one slice = 310 calories" and that there are 8 slices total. The mini-muffin recipe made approximately 32, so each muffin is about 78 calories (plus a few chocolate chip calories).
