I am feeling lazy tonight, so I threw together some tuna with mayo and relish, added a slice of swiss cheese, and made tuna melts for Mal and me. There was some leftover "salad" from last night's dinner, so to give it a little variety, I added black beans and grape tomatoes.
For a sweet snack, I made Chocolate-dipped Apricots, which are one of my favorite desserts ever! I probably ate about 10 of these apricots tonight!!

in college, my friends and i used to always melt chocolate chips in the microwave and dip fruit in it, cafeteria-style fondue! Chocolate-dipped apricots were one of my favs!
WOW yum! is that dark or milk chocolatE? I know dark is supposed to be the healthier choice, but frankly I don't care for it! I'd pick milk over it anyday! And your tuna melt looks yummy!
How do you keep yourself from over induldging once you have a couple pbcups or cookies. I often will have a couple and figure that I blew the day for healthy eating then overinduldge and feel horrible after...any tips?

For me, I try not to get down on myself and get back on track the next day. If I really overindulge, I will make sure I have a good workout the next day.
When it comes to sweets, I will decide before I start eating how many I will have. With cookies, for example, I will take 2-3 out of the box and eat those, then stop...same with Reese's peanut butter cups. Last night, I never put the apricots away after making them. They were on the kitchen counter for a few hours, so I kept going back for one more. After eating a bunch, I finally packed them up and put them in the fridge. Out of sight, out of mind! Also, brushing my teeth helps stop me from over doing it. It signals the end of eating for me. Hope this helps!
