If There's A Will, There's A Way

Hello, my lovely blog readers! I am having some unfortunate blogging problems today. My work computer has a big, bad virus on it that prevents me from using the internet, which while it is being fixed, means no blogging! How very sad! However, if there is a will, there is a way! Being the devoted food blogger than I am, I found a way to publish my breakfast post. My coworker (and good friend) agreed to upload my photos for me, and I am using a public computer at the school to blog away! :) I hope you guys appreciate my efforts! Just kidding! I'm happy to blog for y'all!

Here's breakfast...


Breakfast this morning was a breakfast sandwich made with ham, swiss cheese, and egg whites. My egg sandwich held me over so well yesterday, I decided to have the same thing again today. With my sandwich, I also had 1/2 of a mango, which was very ripe and super sweet!


As always, iced coffee ready to join me on my commute to work...


My breakfast sandwich up close... how delicious does that look?!? To make the egg white patty, I coated a small bowl with cooking spray, poured 1/3 cup of liquid egg whites into it, then popped it in the microwave for 2 minutes. Viola! The end result was a perfect egg patty, ready for a breakfast sandwich.

I don't have a favorite quote right now, but your breakfast sandwich looks fantastic. I was just discussing how I was happy that Starbucks decided to keep their breaksfast sandwiches, but yours look 100% better and I am sure it's healthier, too!

I love microwaving my liquid egg whites like that! It makes them so versatile. I often add cheese or veggies so they cook directly into the egg - YUM!

Hm - I can't think of my favorite quote because every time I read one I think "ooh, I love that!" so I guess I'll take the cheaters way out and say too many to name! ;o)

On an unrelated note, I was wondering how you got to where you are in your career. Did you study higher education administration or student services or something different entirely? I am interested in college advising/administration and am curious to hear about your experience getting there and what you like/dislike about your job, what it entails on an average day, etc. Thanks for sharing!

My Master's is in Higher Education Administration. In my study, I took various courses ranging from student affairs to organizational administration to accreditation to college student development. My degree covered a wide range of higher education topics and issues.

My job is difficult to explain because I do a million different things! My main responsibilities are managing 4 websites as well as the School's online course evaluation system and professional practicum requirement system. Besides the dorky computer stuff, I also update program publications, coordinate meetings, plan workshops/seminars, advise students and many, many other day-to-day tasks. It's never the same thing twice!
